Dylan Holliday
Born in Newcastle and Stockton local. Absolutely loves fishing, surfing and food. Dylan has over 7 years cooking experience from fine dining in and around Tweed Heads and Gold Coast through to good wholesome club and pub food of Newcastle. I am passionate about food and embracing creativity in the kitchen.
Ryan French
Born and bred on the Central Coast NSW, Ryan now calls Stockton home. He is passionate about surfing, good food and anything creative. With 10 years cooking experience, Ryan has an extensive background working for a variety of restaurants, cafes, and pubs throughout Sydney and the Central Coast.
Tammy Davis
Tammy is trade qualified in the Australian Army and has over 30 years of experience working in restaurants. Tammy has worked in cafes throughout Sydney, the Blue Mountains and Port Stephens. She has a love of surfing the beautiful local beaches, running, and eating Thai food.

Mel Gato - Head Chef
Mel has been cooking for 18 years. She worked at the Exchange and the Mary Ellen before moving across to Swansea RSL where she worked for 10 years in the al a carte restaurant, handling all functions and running the bistro at the club. Most of her experience is with bistro-style foods (steaks, schnitzels, burgers, pastas, etc). Her favourite food is Mexican. She believes her family eats Mexican food at least once a week and she loves being able to bring her knowledge and love of Mexican food to Lexie’s on Thursday nights. Her hobbies include camping and bushwalking and she is a massive Stephen King fanatic who loves watching horror movies!!
Kieron Tomlins
Born in the Coalfields (Muswellbrook/Maitland way), cooking has always been in Kieron's blood. From a young age, you would find him working in his family's takeaway shop helping prepare and cook food with great flair. Kieron followed his passion for food which has seen him create culinary delights in some of The Hunter’s fine dining restaurants and local pub bistros. He has worked with & learned from some of the best chefs that Newcastle has to offer. If Kieron isn’t in the kitchen you will probably find him somewhere by the water with his son Lochie, fishing rod in hand catching their next supper.
Heath Fitzmaurice
A Newcastle Boy through-and-through, Heath is happy to call the city by the beach home. He has already accumulated over 8 years of collective kitchen experience throughout a range of commercial venues. Always a keen worker, he loves the fast pace atmosphere of working in a professional kitchen. Heath is also passionate about skating, boxing, fitness and keeping healthy, although he struggles to say no to a good burger, (of which he considers himself a connoisseur.)
